After studying art history, he pursued formal training at Charabot and ACM. His professional journey began in 1998 at International Flavors & Fragrances, where he quickly made his mark with standout creations like Dior Homme and Viktor & Rolf's Flowerbomb. His approach to fragrance creation is minimalist yet profound, focusing on a few select ingredients and a disciplined, almost artisanal methodology.

In 2013, Polge took on the role of Chanel's house perfumer, following his father’s esteemed tenure. His work for Chanel has included the modern reimagining of classics, such as Chanel No. 5 L’Eau, and innovative releases like Misia. Polge’s unique style merges tradition with contemporary flair, reflecting his belief that fragrances should capture the essence of urban landscapes rather than merely continuing nature. This balance between classic elegance and modern innovation makes his creations both timeless and fresh, establishing him as a leading figure in modern perfumery.
